I was reading on one of the threads at Fiction Alley that JRK on her website has revealed that Hermione is actually the oldest of her trio. That would put her birthday on September 19, 1979.
It's a bit nice for all who cross-gen ship her (like me with Herm/Bill), but it's weird because this whole time I thought she was the youngest--and the very image of "precocious."

Well if you think about it, she DOES act the most mature. But no matter with the ages anyways.

Even though I do like Hermione, I've always taken it as more of a prissy, uppity attitude than maturity. She's almost a whole year older than Harry... wild.

You're right about the prissiness. I hate Hermione anyways, she's my least favorite character besides Harry, so I don't care how I view her. Anyways, I don't really think about their ages when I read the books.
